Chipotle Glazed Salmon with Orange Avocado Salsa

I know, it’s officially fall so I need to be posting some pumpkin spice for you all to bake in your cozy house with your fuzzy slippers and your wool sweater and a blanket scarf around your neck. But here in Alberta, we get half a year of sweaters and blanket scarves and fuzzy slippers and warm drinks and comfort food, so I feel like I have a bit of time before I settle into cozy season. So instead, here’s a grilled salmon recipe that’s full of warm flavours, but with an avocado and orange salsa that will make you forget that fall is here;)

If you are worried about the heat level of this, just pull back a bit on the chipotle chili powder and rinse the red onion really well after you chop it so that it has a bit less bite. Matt and the kids love this with all the spices, but I know everyone has a little different idea of what they consider “spicy”!

Recipe

Chipotle Glazed Salmon with Orange Avocado Salsa

Ingredients

  • 4  tsp paprika

  • 2 tsp chili powder

  • 2 tsp chipotle chili powder

  • 1 tsp ground cumin

  • 1/2 tsp garlic powder

  • 4 x 6oz salmon fillets

  • 1 tsp dijon mustard

  • 2 tbsp maple syrup

  • 2 tbsp avocado oil

  • 2-3 avocados, peeled, pitted and diced

  • 1/4 red onion, rinsed and finely diced

  • 2 large navel oranges, peeled and diced

  • salt and pepper, to taste

Directions

  1. Pat salmon dry and season with salt and place in a shallow baking dish.

  2. Combine spices and rub generously all over fillets.

  3. Whisk together mustard, maple syrup and avocado oil. Using a pastry brush or a spoon, spread a bit of the mixture over each fillet.

  4. In the oven, cook at 375 for about 10-12 minutes until glaze is caramelized and salmon is opaque inside and easily flakes with a fork. On the grill, cook on a lightly oiled piece of foil or a copper sheet at 350 for 4-5 minutes for each 1/2 inch of thickness. Salmon is done when glaze is caramelized and salmon is opaque inside and easily flakes with a fork.

  5. Combine avocados, red onion and orange. Salt and pepper to taste.

  6. Serve salmon topped with avocado salsa.
