Easy Grilled Vegetables

An easy side, and it goes with basically any meal. Gluten-free, dairy-free….what more could you ask for in a dish? We’ve always loved grilled vegetables, but I have to say, our grill basket was a game changer for us! We’ve tried tons of different veggie combos, but this one by far is our favourite….try it out and let me know which veggie combo you like best!

Recipe

Easy Grilled Vegetables

Ingredients

  • 2 large zucchini, chopped into half moons slices

  • 2 cups of mushrooms, sliced in half

  • half a red onion, chopped

  • 1 red bell pepper and 1 yellow bell pepper, chopped

  • Avocado oil or Olive Oil

  • Salt + Pepper

  • 1/4 cup feta cheese (make sure it’s goat feta for dairy free!)

  • Balsamic Glaze (this brand is my fave!)

Directions

  1. Preheat grill to medium heat.

  2. In a large bowl, combine chopped veggies. Liberally add salt and pepper. Drizzle with oil and then toss vegetables until coated.

  3. Pour veg into the grill basket on the grill. Every few minutes, toss around the veggies with a spoon.

  4. Cook for about 10-15 minutes. They are ready when a fork piercing a zucchini piece slides off the fork, but still firm enough to hold it’s shape.

  5. Turn veggies onto a serving platter or into a bowl. Sprinkle with feta and drizzle with oil before serving.
