Watermelon, Feta + Blueberry Salad with Lime Basil Vinaigrette
Now that summer is (almost) here, give me allllll the basil. That smell! That colour! That fresh taste! I have a basil plant in the kitchen AND in the garden. This vinaigrette is sooooo delish. You just might see it pop up in a few different recipes this summer, because it’s basically a staple around here.
This summer salad is one of those sweet-and-savoury sides that is as pretty to look at as it is good to eat. What does watermelon salad go with? Serve it as an appetizer, or alongside barbecue chicken skewers, like these easy greek skewers. It’s super simple, and a great dish to add to a summer bbq menu.
Recipe
Watermelon, Feta + Blueberry Salad with Lime Basil Vinaigrette
1 cup fresh basil, tightly packed, stems removed
1/4 cup olive oil
1/4 cup red onion, roughly chopped
1 clove garlic, minced
1 tbsp fresh lime juice
1/4 tsp red chili flakes
1/2 tsp salt
6 cups watermelon, diced into 1-inch cubes
1/4 cup of crumbled feta
1 cup fresh blueberries
Extra basil and coarse kosher salt for garnish
Directions
In a food processor, combine basil, lime juice, oil, garlic, onion, red chili flakes, lime juice and salt. Blend on high until smooth. Taste and add more salt, pepper or chili flakes, if needed.
In a bowl or on a large platter, layer watermelon cubes, feta and blueberries.
Drizzle with vinaigrette and garnish with basil leaves and a bit of kosher salt.
Enjoy fresh! Vinaigrette will keep in a sealed container (like a mason jar) for 3-5 days.
