The Smoothest Iced Coffee Ever!

I need a holiday from the month of June.

Between organizing birthday parties and bridal showers, finding teacher gifts, finishing off this month’s work for my clients, and volunteering for field trips, I’m toasted. There’s also something particularly exhausting about digging through the summer clothing bin to find something that doesn’t look completely outdated, because the last two years of living through a pandemic have made everything I own soooooo 2019;)

I’m embarrassed to admit that when I’m feeling burnt out, my only motivation for completing a task is rewarding myself with a little treat. I wish I could say I was a mature, self-motivated person, but alas, I am not. I’m more like a puppy. Or a toddler. I say to myself, “Erin, you just have to finish these two shoots and then you can have a nice little piece of dark chocolate!” or “Just complete three more tasks on your to-do list and you can make yourself The Smoothest Iced Coffee Ever!” Please, tell me I’m not the only one.

Once you try this iced coffee, you’ll see why it’s such a great motivator. Truly the smoothest, frothiest, creamiest iced coffee I’ve ever had. Try it and we can compare notes on how many tasks we’ve completed now that we all have the recipe. Because I can’t be the only one who functions in life like this, can I?

(If you don’t have a cocktail shaker, you can use a mason jar with a tight-fitting lid for the same effect!)


Recipe

The Smoothest Iced Coffee Ever

Ingredients

  • 2 shots of espresso (or 4 oz very strong brewed coffee)

  • Ice

  • Cream or milk, to taste

Directions

  1. Add a cup of ice and the espresso to a cocktail shaker.

  2. Shake well, until you can hear that most of the ice is melted.

  3. Fill a cup halfway with more ice. Pour the contents of the cocktail shaker over the ice.

  4. Add cream (or sweetener) to taste! Enjoy the smooooooothest iced coffee you’ll ever taste!
