Easy Roasted Vegetable Soup
A good soup recipe is definitely a must for these cold winter months, but a good soup recipe that is as easy as this one? Trust me, you’ll keep it with you forever. It’s really more of a framework that you can add ingredients to and make it your own recipe. You will not believe the beautiful flavour that comes from the roasted veg (especially that roasted garlic…omg!) If you don’t have the ultra-amazing blender that I do, you can always simmer the ingredients in a pot after and use an immersion blender to puree at the end. Have questions or feedback? Easy Roasted Vegetable Soup
Ingredients
Onion
2 Red Bell Peppers
Head of garlic
Butternut squash, peeled and diced (fresh or frozen)
Vegetable or Chicken Broth
Salt
Chili Flakes
For garnish: toasted pepitas, goat cheese, pancetta, chopped fresh herbs
Directions
Preheat oven to 450 F. Core and cut peppers into large chunks, peel and chop onion into wedges. Don’t peel the head of garlic, but slice the top off.
Set vegetables on a pan that is safe under high heat, like the Rockcrok Everyday Pan. Make sure the garlic is set cut-side down on the pan.
Drizzle oil over the vegetables and season with salt and a pinch or two of chili flakes.
Roast the vegetables in the oven for 30-45 minutes, turning and tossing with tongs every 15 minutes or so.
With a Deluxe Cooking Blender: after removing the pan from the oven, carefully put the vegetables in the Deluxe Cooking Blender and add broth. This part totally depends on the consistency you like. I usually add about a cup or two of broth. Set the blender to “Soup” and press start. Let the blender do it’s thing!
Without a blender: After removing pan from the oven, carefully put the vegetables in a large stockpot and add broth. (This part totally depends on the consistency you like. I usually add about a cup or two of broth.) Cook over medium heat. When the broth begins to simmer, use an immersion blender to blend until smooth.
When the blender beeps/when the soup is smooth, serve soup alongside some crusty bread, and top with pepitas, goat cheese or diced pancetta. Enjoy!
