Overnight Spiced Apple Steel Cut Oats
Picture this: you wake up in the morning, groggily roll out of bed, and almost as soon as your bare feet hit the cold floor, you smell fruit and cinnamon. And you smile, because you realize that breakfast is already made. So you skip down the stairs and fill a bowl for everyone in the family with this warm, hearty and delicious breakfast that you top with coconut yogurt, and a smidge of maple syrup. You even have leftovers so you can all have some tomorrow!
This could be you….not just on New Year’s Day, (which is quickly approaching, by the way) but for any day of the year because these steel cut oats are deliciously easy. Modify them with other fruits, or different toppings, but I promise these do not disappoint. Try them this week, and let me know what you think, mmmkay?

Overnight Spiced Apple Steel Cut Oats
Ingredients
1 cup steel cut oats
1 can coconut cream
3 cups water
1/2 tbsp cinnamon
Pinch of each nutmeg and cloves
1/4 cup brown sugar
3 tbsp coconut oil or butter
3-4 apples, chopped and cored
Toppings like: yogurt, coconut yogurt, maple syrup or nuts
Directions
Lightly grease slow cooker with 1 tbsp coconut oil or butter.
Add oats to the slow cooker, then coconut cream, water, cinnamon, nutmeg and cloves.
Chop apples as you like them. You could dice them or slice them, whatever your preference. I leave the peel on, but if you don’t like the peel, then remove it.
Add apples to the slow cooker and stir all ingredients.
Sprinkle brown sugar in as well, and dollop remaining 2 tbsp of coconut oil or butter across the mixture. Cover with the lid.
Cook on low (overnight!) for 8-10 hours. Serve warm with yogurt and other toppings. Enjoy!
Notes:
*If you would like this recipe to be gluten free, make sure your steel cut oats are gluten free.
*Do not use other types of oats. For this recipe to work, they must be steel cut oats.
*Take a peek at the liquid ratio on the back of your container. The brand we use asks for 1:4.5 and since it’s a slow cooker recipe, I’ve increased the liquid by about 1/2 cup. Double check the ratio of your oats and modify if necessary. I’d air on the side of more liquid to be safe!
