Peruvian-Style Rotisserie Chicken with Cilantro Lime Sauce

Decisions, decisions. These days, I feel like there are just too many to make. Of course, there are the standard decisions, like “What should I wear today?” or “Do I want a cup of tea or a cup of coffee this morning?”, but as my day evolves, I feel like the decisions get more complex. “What do I prioritize today?“ or “How much screen time is too much?” or “Online learning or in-person classes?”

Then there are the bigger decisions like “What can I do to stay healthy?” or “How do I explain racism to my kids?” Not to mention choices about career, budgeting, relationships, and the list goes on and on.

By the end of the day, I have some MAJOR decision fatigue. I think that’s why most people find it hard to think of what to make for dinner or how to eat healthy…even people who love food and cooking as much as I do. Sometimes, after a day of making a million tiny decisions, I just want to throw my hands up in the air and order takeout rather than try to understand ingredients on a package or decide what to make for dinner. 

So this is why we have made two rotisserie chickens in the last three days for dinner. Our air fryer makes the rotisserie part sooooo easy, and this Peruvian-style rub recipe is insanely delish, and we added date sugar which creates this gorgeous crispy coating. Have you tried date sugar before? If you haven’t YOU NEED TO. Recipe

Peruvian-Style Rotisserie Chicken with Cilantro Lime Sauce

Ingredients

For the Chicken:

  • 1 whole chicken (approximately 4lbs)

  • 2 tbsp avocado oil

  • Juice from half a lime

  • 2 tsp date sugar

  • 1 1/2 tsp cumin

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 tsp pepper

  • 4 garlic cloves, minced

For the Sauce:

  • 1 cup cilantro (stems and all!)

  • Juice of half of a lime

  • 1/2 tsp chili flakes

  • 2 garlic cloves, minced

  • 1 tbsp white wine vinegar

  • 1/4 tsp salt

  • 1/2 cup mayonnaise

Directions

  1. Dry the chicken with paper towel and tie legs together with cooking twine. Tie wings to breasts. Insert the spit into the chicken and through the cavity. Make sure the bird is centered on the spit. Insert the rotisserie forks to secure the chicken and screw tightly.

  2. Whisk together remaining chicken rub ingredients and rub all over chicken, coating the chicken well.

  3. Attach the spit into the air fryer (here’s where you’ll have to follow the directions for your own rotisserie, if you have it) Here’s the rotisserie directions for mine: cook on “rotisserie” setting at 400 F for 1 hr or until chicken reaches internal temperature of 165 F.

  4. Combine sauce ingredients in a blender, and enjoy!
