Cherry Chocolate Oatmeal Cookies (GF/DF)

makes about 2 dozen cookies
make sure your oats and oat flour are gluten free!

Ingredients

3/4 cup oat flour
3/4 cup old fashioned oats
3/4 tsp baking soda
1 tsp cinnamon
1/8 tsp salt
Zest of a small orange
1 tsp vanilla
1 egg
1/4 cup brown sugar, lightly packed
1/2 cup melted coconut oil
1/2 cup dark chocolate, chopped
1/4 cup dried cherries, roughly chopped

Directions

  1. Combine oat flour, old-fashioned oats, baking soda, cinnamon, salt and orange zest in a bowl.

  2. In another bowl, stir together brown sugar, egg, vanilla, and coconut oil.

  3. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in dark chocolate and cherries.

  4. Don’t skip this step: cover the dough and chill for about 30 minutes, until the dough has hardened enough to form into balls.

  5. Using a cookie scoop, scoop the dough, packing it tightly to prevent crumbly cookies. Spread dough balls onto a baking sheet. Bake for 7-9 minutes at 350 F, but DON’T OVERBAKE! These cookies are best when a little under-baked, they will harden while they cool.

  6. Allow cookies to cool for another 5 minutes before removing cookies from cookie sheet. Store in an airtight container.
