makes 16 bars
3/4 cup + 1/4 cup butter, room temperature
1/2 + 1 cup sugar
1/2 tsp vanilla
1/2 tsp + 1/2 tsp cinnamon
1 1/2 + 1/2 cup flour
1/2 cup almond flour
1/2 cup water
1/2 cup orange juice
zest of an orange
3 cups cranberries (fresh or frozen is fine)
4 tbsp brown sugar
1 cup almonds chopped or sliced
In a large bowl, mix 3/4 cup butter, 1/2 cup sugar, vanilla, 1/2 tsp cinnamon, 1 1/2 flour, and 1/2 cup almond flour. Use your hands or a pastry blender to mix.
Line a 9x13 pan with parchment, and press the base into the pan. Bake at 375 F for about 20 minutes, until golden. Remove from oven and let cool slightly.
Meanwhile, combine water, orange juice, orange zest, 1 cup sugar and cranberries in a small saucepan. Bring to a gentle boil, stirring constantly. Allow to simmer for about 5 minutes. Remove from heat, cool slightly and spread over base.
In a bowl, combine remaining 1/2 cup flour, brown sugar, 1/2 tsp cinnamon, almonds, and 1/4 cup butter. Mix with hands until crumbly, and crumble the mixture over the filling.
Bake at 375 for about 25 minutes. Cool completely before cutting into bars. Store in an airtight container to keep for up to 5 days or freeze.
