makes about 50 small cutout cookies
1 cup flour
1/2 tsp baking soda
1/4 cup unsweetened cocoa powder
1/4 tsp salt
1/2 cup + 1/2 cup dark chocolate, chopped
1/4 cup butter
1/2 cup brown sugar, lightly packed
1 egg, room temperature
Crushed candy cane, finely chopped almonds, sprinkles for decorating
In a small bowl, combine flour, baking soda, cocoa powder and salt.
In microwave safe bowl (the batter bowl is great for this!) melt the chocolate until smooth. Add butter and brown sugar, and whisk until brown sugar is dissolved.
Add egg to chocolate mixture and whisk. Slowly add the flour mixture to the chocolate mixture, and using a scraper, form into a rough ball.
Divide the dough into three sections. Using a rolling pin or the baker’s roller, roll each section to a 1/4” thickness onto a sheet of parchment paper. Stack the rolled sections one on top of another on a baking sheet and freeze until firm (15 minutes should do it!)
Working with one section at a time, use cookie cutters to cut out stars (or any shape you like!) and place on a cookie sheet, a 1/2 inch apart. Use scraps to form a new ball, and repeat cut out process.
Bake at 10 minutes at 350 F or until cookies are firm on the bottom.
Cool cookies before removing them to a cooling rack.
Prepare toppings, such as nuts or candy canes by crushing them in the food processor (I love this small manual one!)
Melt remaining chocolate. Dip cooled cookies in chocolate and place on a parchment paper-lined cookie sheet to set. While chocolate is still setting, sprinkle with chopped nuts, sprinkles or crushed candy canes.

Use candies to create this bright “gingerbread” house this year for a twist on an old classic.
What you’ll need:
- Jolly Ranchers or other hard candy (18 pieces per roof side + 18 pieces for the front and back walls + 16 pieces for the side walls)
- Icing or hot glue to assemble the house
- Battery-operated tea lights or small flashlight
- Silicone Cookie House Molds
Put the unwrapped candy pieces in the mold on a cookie sheet and bake at 350 F for 12 minutes
Place on a cooling rack until completely cooled. As the candy cools, it will harden. Because of the flexible silicone, you can easily pop out of the mold.
After icing is completely dry, place lights in the house to make it glow!
