makes approx 50 cookies
for this recipe to be gluten-free and dairy-free, make sure your ingredients are gluten + dairy free!
1 cup brown sugar
1/2 cup full fat coconut milk or alternative milk of your choice
4 tbsp + 1 tbsp coconut oil
1/4 tsp salt
1 tbsp vanilla
5-6 cups unsweetened shredded coconut
1/2 cup dark chocolate, chopped
Coarse salt for sprinkling
Make caramel sauce.
In Deluxe Cooking Blender: combine brown sugar, coconut milk, coconut oil and salt in blender pitcher. Blend on sauce setting until the blender says “add” and then add the vanilla, close lid and press start to continue cycle.
On the stovetop: combine brown sugar, coconut milk, coconut oil and salt in a saucepan over medium heat. Whisk continually, until caramel starts to get smooth and lightly simmer. Simmer until caramel reaches 240 F on a candy thermometer, or turns a deeper brown colour. Stir in vanilla.
When caramel is done, pour caramel into a large bowl. Add 5 cups coconut and stir until coated. If it’s still really wet, add a little more coconut until firmer.
Line a baking sheet with parchment. Using the medium scoop (or spoon) scoop coconut mixture into balls and place on baking sheet. Chill for about an hour, or until firm.
Melt chocolate in microwave safe bowl (like this batter bowl or silicone prep bowl set) in 30 second intervals, stirring in between until smooth. Add last tablespoon of coconut oil and whisk until smooth.
Dip the bottom of each coconut ball in the chocolate and set back on the parchment. Drizzle tops with chocolate and sprinkle with coarse salt to finish. Chill for 30 minutes to set.
Store macaroons in a sealed container in the fridge or freezer.
