Almond Apricot Granola Bars

These are a seriously addictive snack…so I almost always need to double the recipe. They are gluten-free, dairy-free, and egg-free, which is a nice option if you have to worry about allergies. They are easier to cut once they are fully cooled…if you can wait that long before digging in!

Almond Apricot Granola Bars

Ingredients

  • 1 1/2 cup rolled oats

  • 1/2 cup oat flour

  • 1/4 brown sugar, packed

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1 cup chopped dried apricots

  • 1/2 cup sliced almonds, toasted

  • 1/2 cup unsweetened shredded coconut

  • 1/2 cup coconut oil

  • 1/2 almond butter

  • 1/4 cup honey

  • 1/2 tsp almond extract

Directions

  1. Preheat oven to 350 degrees. Line a square baking pan with parchment paper.

  2. Stir together oats, oat flour, brown sugar, cinnamon, salt, apricots, almonds and coconut.

  3. In a small bowl, melt the coconut oil, and then mix in almond butter, honey and almond extract. Stir wet ingredients into the dry ingredients until everything is evenly coated.

  4. Spread into the pan, pressing mixture into the pan all the way to the edges. Coat your hands with a bit of water or coconut oil to keep the mixture from getting too sticky.

  5. Bake for 25 minutes, until bars are a bit brown on the edges. Allow the bars to completely cool before cutting with a serrated knife.
