Spicy Lime Stovetop Popcorn
I consider myself a sweet tooth, but there are certain salty snacks that I just can’t get enough of. Popcorn definitely hits the top of that list…and in our household, it’s a staple for Friday night movie night! The boys like the classic butter-with-salt combo, but my husband and I have recently started loving this combo. Definitely add salt according to your tastebuds before you dive in!
Recipe
Spicy Lime Stovetop Popcorn
1/4 cup coconut oil
1/2 cup popcorn kernels
1/2 tsp smoked paprika
1/2 tsp chipotle chili pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp salt
Juice of one lime
Extra salt to taste
Directions
Melt coconut oil in a stockpot with a tight fitting lid on high heat. Put two popcorn kernels in the oil and cover until kernels pop (that’s how you know the oil is nice and hot!)
While you are waiting for kernels to pop, mix together paprika, chipotle chili pepper, onion powder and garlic powder.
Once oil is hot (kernels popped!) add spices and 1/2 cup kernels, cover and shake pot, swishing the seeds, oil and spices around in the bottom of the pot.
Alternate between putting the pot on the heat and shaking, until you hear the kernels popping consistently. Turn off heat and continue to shake until you hear the popping stop.
Remove lid, add salt (to taste) and squeeze lime juice over the popcorn, tossing every once and awhile.
Pour into a bowl, and eat! Serve fresh.
