Kennedy's Salad Dressing

If there was a “little black dress” of salad dressings, this would be it. It works with almost any combination of greens, and it’s a great accompaniment to any meal. My mom found this recipe in the newspaper years ago, and it still remains a family favourite….which is why it’s named after my cousin Kennedy (she told my mom it was her fave!) Toss this dressing with some of your favourite greens, dried fruit (like cranberries, cherries or blueberries), nuts or seeds (pepitas, toasted almonds, sunflower seeds), and a sprinkle of cheese (we like to use soft goat cheese, but feta and shaved parmesan are great options too!)

Kennedy’s Favourite Salad Dressing

Ingredients

  • 1/2 cup olive oil

  • 1/2 cup balsamic vinegar

  • Juice of one lemon

  • 2 cloves of garlic, minced

  • 1/2 tsp dry mustard

  • 1/2 tsp sugar

  • 1/2 tsp salt

  • a couple dashes of Tobasco sauce

Directions

  1. Whisk together ingredients in a bowl or shake them in a mason jar.

  2. Keep dressing in an airtight container for up to a week.
