Summer Za'atar Crostini
Summer is all about the snacks. Drinks and appies, eating al fresco, picnics. I firmly believe that snack food doesn’t have to come from a bag. I mean, it can. But why would we want to eat a snack from a bag when we can eat this?!
I discovered Za’atar, a Middle Eastern spice mixture, last year and haven’t looked back. A blend of savoury herbs, warm spices, sesame seeds and sumac, za’atar is the perfect seasoning for chicken or to add flavour to a salad dressing…and it’s definitely the key ingredient to this recipe!

Summer Za’atar Crostini
Ingredients
1 baguette, sliced
Juice of a lemon
2 tbsp olive oil
1 tbsp za’atar spices
Salt and pepper, to taste
5 mini cucumbers, diced
1 cup cherry tomatoes, diced
1 cup hummus
1/2 cup crumbled feta
1/2 cup fresh dill and italian parsley, chopped
Directions
Set the oven to broil. Spread the baguette slices on a cookie sheet and brush lightly with olive oil. Broil for 3-5 minutes, or until the tops are golden and crispy.
In a large bowl, whisk together lemon juice, olive oil, za’atar and salt and pepper.
Toss the cucumbers and tomatoes in the bowl and stir to combine.
Swipe each baguette slice with a healthy layer of hummus, top with about 2 tbsp of the tomato cucumber mixture. Sprinkle with feta and fresh herbs. Serve immediately!
