Pear + Goat Cheese Flatbread
Serve this flatbread as an appetizer (if you have the oven space) or a main dish with a green salad. Consider this combination of pear with the honey-whipped goat cheese a step up from your standard pepperoni or ham and pineapple pizza, but there’s no ingredient so intimidating in this recipe that a picky eater wouldn’t give it a try. Once you try the honey-whipped goat cheese, you’ll want to find other recipes to use it with (my kids love to spread it on apple slices as a snack!)

Pear + Goat Cheese Flatbread
For the crust:
1 tsp instant dry yeast
a pinch of sugar
3/4 cup warm water
1 3/4 cup flour
1/2 salt
To assemble the flatbread:
1 bosc pear, sliced thin
1 tbsp butter
1/4 cup sweet onion, thinly sliced
3 tbsp olive oil
10 sprigs of thyme
2 tbsp honey
1/2 cup goat cheese
1/4 shredded pecorino romano or parmesan cheese
juice of one lemon
Directions
To make the crust, combine sugar, yeast and warm water, and allow to sit for 8 minutes.
Combine flour and salt in a large bowl. Once yeast mixture is ready, pour over the dry ingredients and use hands to form dough.
Knead for about 5 minutes, rotating as you knead.
Separate dough into two sections and slowly stretch out into two-12 inch ovals. Place on parchment paper on a baking sheet or pizza stone. Set aside.
Add three sprigs of thyme to a small bowl with 2 tbsp of olive oil. Allow to sit for 5 minutes.
Meanwhile, heat butter over medium heat and add onion, stirring constantly until the onions begin to soften and turn brown. Add pears and saute mixture for a few minutes. Pears don’t have to be fully cooked, just a bit softened.
Mix together 1 tbsp honey with goat cheese and remaining thyme, with stem removed.
Preheat oven to 450 degrees. Rub thyme-infused olive oil on flatbread, spread goat cheese on top, then layer on onions and pears, and sprinkle shredded cheese on top.
Bake for about 10 minutes, until crust is golden and firm and cheese is melted.
Drizzle with remaining honey, and a squeeze of the lemon juice on top of each flatbread. Slice and serve immediately.
