Orange Spice Loaf

makes 12 x mini loaves, 1 x large loaf, or 1 x bundt cake

Ingredients

1 cup butter, room temperature
1 cup sugar
3 eggs
1 cup full-fat greek yogurt (coconut yogurt also works!)
Zest of an orange
1/2 tsp ginger
1/2 tsp cardamom
Pinch of cloves
1 3/4 cup all-purpose flour
1 tsp each of baking powder and baking soda
1/2 tsp salt
2 tbsp orange juice
1/2-3/4 cup icing sugar
1/4 tsp cinnamon

Directions

  1. In the bowl of an electric mixer, beat together butter and sugar until light and fluffy. Scrape down the bowl and add eggs one at a time, beating well after each addition.

  2. Add yogurt, orange zest, ginger, cardamom and cloves.

  3. Sift together flour, baking powder, baking soda and salt. Gently fold into the butter mixture until completely incorporated.

  4. Use the medium scoop to distribute batter into brownie pan (this will also work in 2 regular loaf pans, or a muffin tin!) If you like the look of the orange slices on the top, slice oranges very thin and press them into the top of the batter of each mini loaf.

  5. Bake at 350 F for about 25 minutes, or until a toothpick inserted in the centre comes out clean.

  6. Remove mini-loaves and place on baking rack to cool. Whisk together icing sugar, orange juice and cinnamon. Add icing sugar until you reach desired consistency. Use a pastry brush to lightly brush glaze over loaves. If you aren’t a fan of glaze, you can also dust with icing sugar.

  7. Store in a sealed container for 3 days, or freeze unglazed for up to a month before thawing and glazing.
