Citrus Salad with Mint + Honey

It’s pretty and easy. This salad is a jack-of-all-trades because you can add it to pretty much any type of menu - breakfast, brunch, lunch or even as a dessert - and it will fit right in. Use your favourite citrus fruits for this, mix and match depending on what’s in season!

Recipe

Citrus Salad with Mint + Honey

  • 3 Cara Cara Oranges

  • 3 Large Grapefruit

  • 4 Medium Blood Oranges

  • 3 tbsp honey

  • Juice from one orange

  • 2 tbsp Fresh Mint, chopped, plus a few sprigs for garnish

  • Whipped Cream (if making as a dessert)

Directions

  1. With the rind on, slice oranges and grapefruits into 1/4”-1/2” thick slices.

  2. Lay each slice flat, and cut off rind in small, straight sections, turning as you cut until there is no rind left. See photos above for how finished slices look…kind of like a hexagon or pentagon.

  3. In a mason jar with a lid, combine the orange juice with honey and mint. Shake well, until combined.

  4. On a large platter, arrange a layer of slices, using a variety of citrus types. Drizzle about 1/3 of dressing over the layer. Repeat layering and drizzling until you’ve used all the citrus and dressing.

  5. Add mint sprigs on top for garnish. If serving as a dessert, serve with a large dollop of whipped cream.
