Kale Salad with Lemon Vinaigrette
Aren’t we all just trying to find a way to enjoy kale? Trust me, this recipe is a winner. Bonus point to this salad for keeping in the fridge without getting soggy for a day or two! Don’t skip the massage at the beginning….that’s what makes the kale taste so good!

Kale Salad with Lemon Vinaigrette
2 large bunches of kale, centre stalks removed
1/2 cup shredded parmesan
1/2 cup sliced almonds, toasted
Juice of a lemon
1/4 cup olive oil
2 cloves garlic, minced
2 tsp dijon mustard
salt + pepper, to taste
Directions
On a cutting board, massage washed kale for about 5 minutes (it’s kind of the same motion as kneading dough) Don’t skip this step! It’s what takes the bitter taste out of the kale. Make sure you massage every leaf!
Rip the leaves into bite sized pieces, and combine in a bowl with parmesan and almonds.
Whisk together lemon juice, olive oil, garlic, and dijon. Add salt and pepper to taste.
Toss salad with dressing and serve!
