Watermelon, Mint and Lime Mocktail Margarita
I’ve never been one to crave a cold beer, or even a frosty mug of root beer, for that matter. There was a short stint I had with 7-Up when I was pregnant with Jack, and a couple slurpee cravings in the dead of summer when I was pregnant with Henry, but overall, I’m more of a sparkling water kind-of-girl. This drink was a game changer for me….it’s perfectly slushy, not-too-sweet, with a hint of mint and lime that is just oh-so-refreshing on a hot day. Lucky for us, this year we had a couple heat waves in Alberta, and so this drink became somewhat of a staple in our house this summer. For the boys, I dip the rim of the glass in lime sugar, but I like to dip mine in salt. Customize it as you choose!

Watermelon, Mint and Lime Mocktail Margarita
Ingredients
4 cups of cubed watermelon, frozen
2 cups of cold water, plus extra for desired consistency
4 tbsps of lime juice, or about 2 limes, juiced
handful of mint leaves, plus extra for garnish
Finely grated lime zest, and a few tablespoons of sugar (lime sugar) or coarse sea salt
Directions
If you would like to use lime sugar on the rim, pulse lime zest and sugar in a food processor until mixture is crumbly. Pour the mixture into a small saucer or plate and set aside. If you’d rather use salt here, go for it!
In a blender or food processor, combine water, lime juice, and watermelon
Blend until smooth. Add water if necessary for desired consistency.
Add mint to blender and blend until mint is just chopped but not pureed.
To serve: Use the remainder of your squeezed lime or some water to wet the edge of your serving glasses.
Dip the edge of the glass in the lime sugar until well coated.
Pour watermelon drinks into glasses and serve!
