Ricotta-Stuffed Apricots with Pistachios and Honey

I’ve been a recipe sharer long before starting this blog. What good is food if you aren’t going to share it? That’s my philosophy anyways. The only problem is, some recipes aren’t specific enough for some of my friends. “But Erin, how much ricotta?” or “How many apricots?” or “How many pistachios should I sprinkle on top?”

This is one of those recipes that make the detail people feel a little crazy….but I promise, if you follow your tastebuds on this one, you really can’t go wrong. Do you have a sweet tooth? Add more honey! Do you like a bit more crunch? Add more pistachios. There’s no right or wrong!

Recipe

Ricotta-Stuffed Apricots with Pistachios and Honey

Ingredients

  • fresh apricots, washed, halved and pitted

  • ricotta

  • shelled pistachios, chopped

  • runny honey

  • salt

Directions

  1. Fill apricots with ricotta.

  2. Sprinkle with pistachios.

  3. Drizzle with honey.

  4. Sprinkle with salt, to taste.
