Stone Fruit Salad
Give me some produce, and I’ll give you something delicious. It feels wrong to write these things up as recipes, because I feel like the ingredients do most of the work, I’m basically just slicing them up and throwing them together. Every time I’ve made this dish, friends say “How do you make this?! I need the recipe!” But I’ve been holding back from posting it because it seems too simple to be considered a recipe…and yet, here we are. Presentation helps on this one, but as long as you pick ripe and delicious fruit, it will taste perfect, every time!

Stone Fruit Salad
Ingredients
Your favourite stone fruit, such as peaches, nectarines, plums, apricots or cherries
Kalamata olives
Plum tomatoes
Cherry tomatoes (assorted colours look pretty, but are not necessary)
Grapes
Soft goat cheese
Fresh Basil
A drizzle of good quality olive oil
A drizzle of balsamic glaze
Directions
Wash and slice all the produce. I like to do larger wedges for the plum tomatoes, slices for the stone fruit, and halves for the cherry tomatoes.
On a plate or platter, use a spatula or a spreading knife to spread the goat cheese on half of the plate. If you are having trouble spreading, you can lightly brush the knife with olive oil to make it more spreadable.
Arrange fruit, tomatoes, olives and grapes on the half without the cheese, covering the seam down the middle. Top with fresh basil.
Finish with a drizzle of olive oil and balsamic glaze, a pinch of salt, and a generous crack of freshly ground pepper. Serve on it’s own, or alongside a sliced and grilled baguette!
